Crazy Cooking Couple: Veggie Loving Wednesday

Time for another What I Ate Weduesday with the Jen the genius over at  PeasandCrasyons.

Each and every Wednesday the foodie blog world comes together to share our tasty bites from the week! And since it's February Jen decided we should all declare our love for veggies this month. That girl loves her veggies! Come on with a name like PeasandCrayons I am sure you already knew that. So we are going to share some of our best bites this week and of course the array of veggies we've had!

We change things up a little bit each week from the traditional WIAW and give a recipe too. Just in case you want to make our awesome eats too!

BREAKFAST:

Monday night we hit the gym up and went at it hard core! So Tuesday we both woke with a HUGE appetite. So we threw together a speedy veggie omelet made with 5 egg whites and with a slice of Ezekiel Low Sodium Toast. Just trying the bread out  so we have not made up our minds about it but since Jen needs to cut her sodium intake (because of her heart) this bread makes it super easy. 0mg of sodium!

LUNCH:

This week for our lovely lunch date we kept it classy with Chipotle. Who cares that its technically Americanized Mexican fastfood.

Don't judge. It is delicious. And for $7 bucks a pop you will have onion breath a super stuffed tummy which you cannot beat. It's funny because we both get the SAME thing now. Our tastes have kinda fuse together after 5 years. So our Chipotle bowl consists of fajita onions & peppers, black beans, chicken, fresh tomato salsa and a ton of leafy green lettuce. Of course we sprinkle on some homemade Mombo Sauce for good measure.

DINNER

Chicken Pizza. Yup that is right. Chicken and pizza. One night we could decide if we wanted chicken or pizza. Two very different choices we know. But then it dawned on us. We don't HAVE to pick! So tasty and quick to make. We sided it with some pancetta wrapped asparagus and had a lovely meal. So now you've decided you don't want to choose either. Well your in luck! Here is the recipe.

Non Food Items

Frying Pan

Lid

Spatula

Non-Stick Spray

Ingredients

2- 6 oz boneless skinless 99% fat free chicken breasts

1/2 cup low moisture mozzarella cheese

1/2 cup low sodium tomato sauce

6 turkey pepperonis

** salt, pepper, Italian seasoning to taste**

Directions

  1. Apply spices to chicken breasts as desired.
  2. Pan fry each chicken breast on medium - high heat until almost all of the pink is gone and it is about 95% "done."
  3. Place 1/2 of tomato sauce on each chicken breast.
  4. Top sauce with 1/2 of the cheese on each breast.
  5. Add more spices at this time should you desire.
  6.  Place 3 pepperonis on each chicken breast.
  7. Add lid to pan and cook covered for about 3-4 minutes.
  8. ENJOY!
